As also eroticmodels and pornstars are celebrities.....
Do you think it is necessary for those professionals always to have someone with them to be protected from fans or stalkers like Filmstars?

I think if they are feeling threatened by someone in particular, or if they just feel safer that way, then yes. Also, if you're really famous (like Jenna Jameson), you really need a bodyguard with you (unfortunately). She probably can't even go pee withouth Clay waiting outside the door.
People can be crazy, and in situations like this, I think of the bad first in human nature instead of the good. Some think that because a girl is spread-eagle in a magazine or in films, that they "know" her. They think that because of this, they "own" a part of her.
But, it's up to the girl...if she feels safer with a bodyguard around, then more power to her.

I think you'll find most celebrities go about their day to day lives without bodyguards or special security precautions.
Those celebrities who do have bodyguards or security details usually have a reason... They’ve either been threatened or have been the victim of stalking.
I’m not sure about Europe but in the US many local and/or state police agencies have full-time dignitary protection and anti-stalking units that investigate and respond to threats against public figures.
