Hi All;

It's about time we had a thread dedicated to food... I'll kick things off with my caramrel apple pie recipe, hope you like it.

Caramrel Apple Pie

Ingredients:

· 1 recipe pastry for a 9 inch double crust deep dish pie
· 1/2 cup packed brown sugar
· 1/4 cup butter, melted
· 1/3 cup all-purpose flour
· 5 cups thinly sliced apples
· 2/3 cup white sugar
· 3 tablespoons all-purpose flour
· 2 teaspoons ground cinnamon
· 1 teaspoon lemon juice
· 20 caramels, halved
· 2 tablespoons milk

Directions:

1. Preheat oven to 375 degrees F (190 degrees C).
2. To Make Taffy: In a small bowl combine brown sugar, melted butter or margarine, and 1/3 cup flour. Mix well and set aside.
3. To Make Apple Filling: Place apples in a large bowl. Add white sugar, 3 tablespoons flour, cinnamon, and lemon juice. Toss until all ingredients are mixed well and apples are thoroughly coated.
4. Spoon half of apple filling into pastry-lined deep-dish pan. Top with half of caramels and half of taffy mixture. Repeat process with remaining apple filling, caramels and taffy mixture. Place top pastry over filling and seal well (this is very important--if edges are not sealed, caramel will leak out all over). Cut steam vents and brush top crust with milk or light cream.
5. Cover pie with foil and place on a baking sheet. Bake in preheated oven for 25 minutes. Remove foil from pie and bake for another 20 to 25 minutes, until crust is golden. Serve warm.

No worries mate. Try this recipe for Chicken Florentine with Alfredo Sauce instead.

Chicken Florentine:

2 tbsp. diet butter
2 skinless & boneless chicken breasts, 8 oz. each
1 (10 oz.) pkg. frozen spinach, thawed & drained
1 cup cooked rice (preferably brown rice)
1/4 tsp. nutmeg
2 tbsp. grated Parmesan cheese

Alfredo Sauce:

1 cup evaporated skim milk
1 tbsp. diet butter
Dash garlic powder
1 tsp. minced parsley
Freshly ground black pepper to taste
1/4 cup grated Parmesan or Romano cheese
2 tbsp. flour

To make sauce, heat skim milk in a saucepan over medium heat. Do not burn or scald milk. Add the butter, garlic, parsley and pepper. While stirring constantly with a wire whisk, gradually add the cheese and then the flour. Reduce the heat to low, stirring frequently. Cook for about 10 minutes, until sauce thickens enough to coat a spoon. Transfer to gravy boat when ready to serve.

To make chicken, in a large non-stick skillet, place butter over medium heat to melt. Place chicken in pan and cook 4 to 5 minutes on each side until browned. Remove chicken from pan and cut in diagonal slices 1" thick.

In a saucepan, combine spinach, rice, nutmeg and Parmesan cheese. Heat 3 to 4 minutes until warm. Spread spinach mixture evenly on 4 plates. Distribute chicken slices equally on top of spinach.

I see this thread has potential.. Nice one Raze.
Here's the recipie for my mum's chocolate pudding. This thing rocks, i love it!

Chocolate Pudding:

1 cup self-raising flour
1 egg
3/4 cup sugar
1oz melted butter
1/2 cup warm milk

Sauce

1 1/2 (one and a half) cups sugar
2 1/2 tablespoons cocoa
1 1/2 cups black coffee

Sift flour, cocoa & sugar, add melted butter & warm milk, beat for 2 mins and put in casserole dish. (or any deep dish)
Mix together extra sugar, cocoa & sprinkle over mixture. Pour black coffee over the top & put in oven at 180°c for 35 mins.
Best served with whipped cream or vanilla ice cream.

Thanks Grant, here's another one combining two my favorite things... Beef & Bourbon.

Bourbon Street New York Strip Steak

Ingredients:

2 (6 ounce) boneless New York strip steaks
3 cups bourbon whiskey
1 cup dark brown sugarDirections:


Gently tenderize steaks with a meat mallet. With a sharp knife, lightly score the meat on one side diagonally. Place steaks in a casserole dish, scored side up, and pour bourbon over them. Rub the brown sugar evenly over each steak. Marinate in refrigerator for 1 to 3 hours.
Preheat grill to high heat, and lightly oil grate.
Place the steaks on the hot grill, with the sugar side down. Let cook until sugar has caramelized, 3 to 5 minutes, then flip steaks, and finish cooking to desired doneness.Enjoy. :)

One more before I start dinner...

Bourbon Chicken

Ingredients:

4 skinless, boneless chicken breast halves
1 teaspoon ground ginger
4 ounces soy sauce
2 tablespoons dried minced onion
1/2 cup packed brown sugar
3/8 cup bourbon
1/2 teaspoon garlic powderDirections:

Place chicken breasts in a 9x13 inch baking dish. In a small bowl combine the ginger, soy sauce, onion flakes, sugar, bourbon and garlic powder. Mix together and pour mixture over chicken. Cover dish and place in refrigerator. Marinate overnight.
Preheat oven to 325 degrees F (165 degrees C).
Remove dish from refrigerator and remove cover. Bake in the preheated oven, basting frequently, for 1 1/2 hours or until chicken is well browned and juices run clear.

That bourbon chicken and bourbon steak sounds nice, Raze.
Here's another of my favourites.

Chicken Diane (or steak diane, whichever you prefer)

Chicken breast (boneless)
Butter & oil
Garlic - crushed
Cream
Worstershire sauce

Heat butter and oil in frypan, fry chicken with garlic on top until 3/4 cooked. Pour on cream & worstershire sauce, cook chicken & sauce until creamy.

If you'd prefer Steak, use steak instead of chicken.

Hey Grant; oh yeah, they're good... So is this one:

Pork Tenderloin in Bourbon

Ingredients:

1/4 cup soy sauce
1/4 cup bourbon
2 tablespoons brown sugar
2 cloves garlic, halved
3 pounds pork tenderloin
Directions:

Mix together soy sauce, bourbon, brown sugar, and garlic. Pour over pork, cover, and refrigerate at least 2 hours, turning occasionally.
Preheat oven to 325 degrees F (165 degrees C). Remove pork from marinade, and place on rack of shallow roasting pan.
Bake for 45 minutes or until meat thermometer registers 160 degrees F/71 degrees C.

Baked Cod Creole

Ingredients:

3 cups water
1 1/2 cups uncooked white rice
1/4 cup butter
1 onion, chopped
1 clove garlic, minced
2 stalks celery, chopped
1 green bell pepper, chopped
1/4 cup all-purpose flour
2 cups milk
1 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon hot pepper sauce
1/2 cup chili sauce
1 pound cod fillets
2 tomatoes, slicedDirections:


Preheat oven to 400 degrees F (205 degrees C). Lightly butter a 9x13 inch baking dish. In a saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
In a Dutch oven, melt the butter over medium heat. Add the onions and garlic. Cook until tender about 4 minutes. Add the celery and pepper. Cook for 3 minutes. Do not brown add the flour and stir well. Cook for 3 minutes.
Stir in the milk and bring just to a boil. Season with salt, pepper and hot sauce. Stir in the chili sauce. Taste and adjust seasoning.
Place rice into the bottom of the prepared pan. Arrange the fish fillets over the rice in a single layer. Place the sliced tomatoes over the fish and pour the sauce over the top.
Bake at 400 degrees F (205 degrees C) for 20 minutes or until fish is just cooked and flakes easily with a fork.

A Delicious Cherry Pie

Ingredients:

1 deep dish pastry for double crust
2 (16.5 ounce) cans pitted dark sweet cherries, drained with syrup reserved
1 (16 ounce) can pitted sour cherries, drained
3/4 cup white sugar
3 tablespoons arrowroot powder
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
1 tablespoon unsalted butter, melted
1 teaspoon lemon juice
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1/8 teaspoon red food coloring
Directions:

Preheat oven to 425 degrees F (220 degrees C). On a lightly floured surface, roll out one crust, and place in a 9 inch deep dish pie plate. Roll out top crust, and set aside.
Measure 1 1/2 cups reserved cherry syrup into a small saucepan over low heat. Mix together sugar, arrowroot powder, cinnamon, and salt. Stir into syrup until dissolved. Increase heat to high, and bring syrup to a boil. Cook for 1 to 2 minutes, or until thickened. Remove from heat, and stir in butter, lemon juice, vanilla, almond extract, and red food coloring.
In a large bowl, combine cherries and thickened syrup. Gently toss until evenly coated. Pour filling into pie crust. Cover with top crust, and crimp edges with fork. Make a few fork vents in top pie crust to allow steam to escape during baking.
Bake in preheated oven for 20 minutes, then reduce heat to 375 degrees F (190 degrees C). Continue to bake for 30 minutes. Allow to cool for 3 hours before serving.

Ingredients:

1. Chicken breasts (thinly sliced)
2. Italian bread crumbs
3. Thinly sliced pastrami and ham (deli style)
4. Eggs
5. Mozzerella cheese (slices)
6. Wooden skewers

Wash, then tenderize the chicken breasts; if they are a little thicker, tenderize and beat them until they are thinner.

Crack (at least) 2 eggs, and mix them in a bowl, and place a good amount of bread crumbs in either a ziplock bag, or simply on a plate.

Season chicken breasts any way you like--I like to use parsley, basil and oregano--but not too much, because there are seasonings in the bread crumbs.

Lay the chicken breast flat, and alternate layers of cheese, pastrami and ham. Roll up the breast, and dip into the egg batter, then into the bread crumbs, covering the breast well with both. Insert the skewer.

Bake at about 400 degrees for about 40-45, or until cooked, since ovens vary.

These chicken rolls are DELICIOUS!!! :banana: :banana: :banana: And, when you cut into them, they look very cool, because of the layers. They are great with a baby spinach leaf salad.

Baked Ziti

Ingredients:

1 (16 ounce) package ziti pasta
24 ounces ricotta cheese
1 pound shredded mozzarella cheese
1 egg, beaten
1 (32 ounce) jar spaghetti sauce
1/4 cup grated Parmesan cheeseDirections:

Bring a large pot of lightly salted water to a boil. Add ziti and cook for 8 to 10 minutes or until al dente; drain and rinse.
In a medium bowl, mix ziti, ricotta cheese, mozzarella cheese, egg and 1 1/2 cups spaghetti sauce.
Preheat oven to 375 degrees F (190 degrees C).
Lightly grease a 9x13 inch baking dish and spoon in ziti mixture. Top with remaining spaghetti sauce, followed by Parmesan cheese.
Bake in preheated oven for 30 minutes; let stand for 15 minutes before serving.

Lemon Ginger Chicken

2 lbs. boneless chicken breasts
1 c. lemon juice
4 cloves minced garlic
6 tbsp. ground ginger
1 c. flour
1 tsp. paprika
1 tsp. pepper
1/4 c. chicken broth
4 tbsp. brown sugar
1 lemon, thinly sliced
Vegetable oilCombine lemon juice, garlic, and 4 teaspoons ginger. Marinade chicken in mixture for 2 hours. Combine 2 teaspoons ginger, flour, paprika, and pepper. Remove chicken from marinade and coat with flour mixture. Fry in small amount of vegetable oil until golden (about 5-7 minutes). Place chicken in baking dish and sprinkle with brown sugar. Arrange lemon slices on top and bake at 350 degrees for 45 minutes. Baste every 15 minutes. Serve immediately over cooked rice, if desired.

I just made some for the family so I thought I would post the recipe up here for those of you who likes to cook like me. :icon_bigg

Attention!!! I'm not great into explaining things especially recipes but I'll try to do it clearly. If in any case you don't understand something, just tell me by posting here or by sending me a lil' PM. I'll be happy to answer you. :icon_bigg

Ingredients:

250gr of flour
6 eggs
60gr of sugar
750gr of milk
80gr of butter

What to do:

- Pour the flour into a bowl or something like that.

- Make a hollow in the middle of the bowl by pushing the flour to the side of the bowl.

- Put the eggs into the bowl of flour in the middle of the bowl where it is hollow.

- Stir the eggs and flour together until they are both well mixed up.

- While continuing to stir, pour slowly the milk into the bowl of flour and eggs.

- Then, after pouring the milk and stirring a little bit, pour in the sugar slowly and stir a little bit more.

Once you have finished, let it rest for at least 2 hours in a humid place. Of course, the more it rests, the more it's better.

Tip: To do so, you can just leave the bowl on a table by covering it up with a wet piece of tissue.

Here's what to do once it has rest at least two hours:

- Cut 80gr of butter.

- Melt the butter down.

- Put the melted better into the bowl and mix it up a little bit.

Once you have done so, all you need to have is a heated pan and a ladle to pour the liquid into the pan.

It is advised to butter a little bit the pan at the beginning or else the crępes will stick to the pan. Keep in mind that a crępe is thin, not thick as a pancake. One ladle spoon is enough for a 20cm (around 8 inches) diameter pan.

Once done, you can eat the crępes with anything you want. Hope you'll enjoy making it and eating eat. :icon_wink

Tuscan Chicken Cacciatore
4 Servings

3 lbs. boneless, skinless chicken breasts, cut into large pieces
6-8 large, ripe Roma or plum tomatoes--cored, peeled, seeded, and chopped (or one 28-oz can
Italian chopped tomatoes)
1 large sweet onion, thinly sliced
1 tsp. kosher or sea salt (or to taste)
1 tsp. freshly ground black pepper (or to taste)
1 Tbs. extra-virgin olive oil (or light olive oil, if you prefer)
4 cloves garlic, freshly minced
2 Tbs. fresh rosemary, chopped
1/2 cup white wine vinegar
1/2 cup dry white wine
3/4 cup reduced sodium, fat-free chicken stock
1 1/2 tsp. butter (light butters are acceptable)
1 1/2 tsp. all-purpose flourRinse the chicken chunks under cool water, dry with paper towels, and season with salt and pepper. In a large skillet or dutch oven, heat the oil over moderate heat. Add the garlic and saute until golden (about 1-2 minutes). Add the onions and cook until almost translucent. Add the chicken and rosemary and cook, turning the chicken until it is brown on all sides. Increase the heat to high, add the vinegar and cook, scraping up the browned bits on the pan and incorporating that into the saute. When vinegar is almost evaporated, reduce the heat to med-low and add the tomatoes and wine and cook until it is slightly reduced. Stir in the chicken stock, cover, and simmer. Turn the chicken a couple of times until tender. Mash the butter and flour together until they form a thick paste. Add it to the pan and stir into the sauce until it is thickened and fully incorporated. Simmer a few more minutes. Serve hot over pasta.

why, do new yorkers not cook either? :) i love that city though...and the restaurants are wonderful. last october i went there and two restaurants stick to mind...tao and bed...very fun place and good food.

People do cook in New York... But I lived in the city for about a year and I don't think I ever touched the stove in my apartment... I had take out menus from about 20 different restaurants so I’d order take out or go out every night.
